Sinapius (sin-ay-pi-us) Vineyard is located in the heart of the Pipers Brook wine region in Northern Tasmania, above the banks of the Pipers Brook. The vineyard, formerly known as Golders Vineyard, was purchased By Vaughn Dell and Linda Morice in 2005. Both have spent time studying and working in the Hunter Valley, Yarra Valley and Margaret River and dreamt of returning home to Tasmania to grow Pinot Noir and Chardonnay in what they believe is the premier location in Australasia. In order to maintain the highest quality they aim to cap production at a maximum of 1,000 cases, from three hectares of close planted vineyard.
85% Riesling sourced from the Tamar Valley co-fermented with 10% Grüner Veltliner & 5% Pinot Gris sourced from our estate grown vines. Very low yields and intense concentration of flavours, this wine was whole bunch pressed, two thirds fermented and matured in old 500 litre barrels, then remainder in stainless steel. The wine was left on lees for 7 months with occasional battonage to create a creamy mouthfeel. The wine went through partial malolactic fermentation, however still retaining a fresh natural acidity. A complex wine showing stone fruits, pears, green papaya and Tahitian lime, with hints of musk and white pepper and a savoury textured twist to a long dry finish. This is delicious !
