As the quotes above make clear, this pioneering biodynamic Yonne domaine (the same department of Burgundy which includes Chablis) produces fabulous, terroir-rich Burgundies, and surely this region’s greatest values (even with the recent price rises forced on the Domaine by the crippling yields). For a Domaine that works in an area that most wine lovers have never heard of, Goisot has earned an unprecedented reputation in France. The late Anne-Claude Leflaive once described Goisot as a “one of the super stars of French winemaking”.
How has such a small, quiet, out-of-the-way grower broken into the Burgundy elite? In short, they farm some of northern Burgundy’s purest limestone vineyards, possess a large proportion of old vines, and cut no corners in their vineyard work and élevage. In fact, the Goisot’s biodynamic work in the vineyard is at a standard that knows few equals (anywhere) and certainly places the Domaine at the very top of the greater Chablis area. Once again there is zero mystery as to where the wine quality derives: quality terroir and zero compromises = top notch, authentic wines.
Biodynamic. (Sauvignon Blanc). Goisot produces two wines from 100% Sauvignon Blanc: the Exogyra Virgula; and this wine, which is drawn from a single parcel of 1.3 hectares on Barrois limestone (a Portlandian-era limestone with lots of pebbles and silty clay). It was vinified in tank only and raised on its fine lees. This is the richer, more hedonistic of the two wines. As with Goisot’s Aligoté, you’ll find a far fleshier texture than you may expect of this varietal, accompanied by a spicy, mineral core and intense saline/mineral notes.
While Goisot’s Saint-Bris wines do share some attributes with the best of Sancerre, the wines also tend to offer a more overt citrussy, pithy profile, something this layered, chalky and peppery Burgundy has in spades. Aromatically, it’s tinged with refined green/underripe tropical fruits, while soft herbs find their match with wet pebbles, a touch of faint reduction and a twist of honey blossom. The palate carries great clarity and energy—so mouth-watering but also so pulpy and delicious, it’s crying out for a plate of fresh seafood.
