Description
Bindi’, 50 kilometres north-west of Melbourne in the Macedon Ranges, is the family property of the Dhillon family. Originally purchased in the 1950s as part of the larger grazing farm ‘Bundaleer’, ‘Bindi’ is a 170 hectare farm of which 7 hectares are planted to Chardonnay and Pinot Noir. Fifteen hectares are dedicated to managed plantation eucalypts for high grade furniture timber whilst the remainder of the land is maintained as remnant bush land and important indigenous grasslands.
The Bindi vineyard is the fundamental focus of our endeavors. Our vineyard and winemaking philosophy is to seek balance and purity in the expression of our various individual vineyard sites and this philosophy is applied to farming and conservation at ‘Bindi’; the preservation of the natural harmony.

This simple fact is an insight into the care and respect the Dhillon family has for its land, its heritage and its future. There are only 2 varieties planted (pinot noir and chardonnay) on the home vineyard, with both long-established for their stellar quality. Bindi is without question among a select few at the top echelon of Australian wine and essentially has been ever since its 1988 plantings first hit their straps. “
At the upper end of the Chardonnay planting, where the quartz incidence in the soil is the greatest the fruit has extra complexity, finesse and intensity. This wine comes exclusively from this soil. This area is approximately half one hectare in size. The characteristics are similar in the Quartz Chardonnay to the Kostas Rind Chardonnay but all aspects are amplified here yet remain in complete harmony. The winemaking is the same for both wines however the Quartz Chardonnay sometimes spends a few months longer in barrel and there is a higher percentage of new wood used, being around 35%. Production varies from 150-250 dozen per vintage.
From the winemaker about this wine: “The juice goes to barrel straight from the press tray, with no additions of yeast, nutrients or enzymes. Once the juice is in the barrel a small amount of sulphur is added and then we wait, usually about five days, for the fermentation to begin. The wine spent 10 months on yeast lees in French barrels, of which 25% were new, and was bottled in early March. The 2021 is a classic Quartz Chardonnay. It is complex, poised and vibrant. There are layers of citrus aromas complemented by spice, cream, wet stones and meal. The palate is very fresh and bright with excellent intensity, balance and drive. These wines begin to drink at their best after five years in bottle and for a decade beyond that. Patience required.”

Tightly wound, precise and refreshing, light floral elements, citrus oil and chalky minerally pucker. Intense wine, incredibly persistent and lengthy, some faint almond and hazelnut elements, and lime-lemon-saline-minerally acidity drawing things exceptionally long. Such fine detail here. A wine of grace and yet presence. Beautiful, wow stuff.”
