Yarrabank is widely recognised as one of Australia’s flagship sparkling wines poured at the finest restaurants. A joint venture between Champagne Devaux in France and Yering Station of Yarra Valley has produced this top shelf vintage sparkling.
The 2021 vintage is 57% Pinot Noir, 43% Chardonnay. Fruit from the upper Yarra was hand picked and underwent two fermentations – one in steel, one in bottle.
Pale straw lemon in colour. Aromas of green apple skin, white blossom, oyster shell and hints of freshly baked crust. Lovely purity of white stone fruit, citrus blossom and lemon oil. Driving the palate are the beautiful creamy mousse and fresh chalky acid line, gathering delicately complex flavours of baked pastry and crushed shells.
