Ashton Hills has the oldest pinot vineyard in the Adelaide Hills. Stephen George wears 3 winemakers’ hats – one for his Ashton Hills wines coming from his estate vineyard high in the Adelaide Hills, one for Galah Wines and the other for the iconic Wendouree in Clare. He refers to his dry grown Piccadilly Valley vineyard planted back in 1982 as the “Burgundy of the Adelaide Hills.” Ashton Hills has received many awards including the coveted 5 Red star rating from James Halliday.
Fine sparkling wine made from 100% Adelaide Hills Pinot Noir fruit (method champenoise). Salmon pink in colour with a full, soft mousse palate and fine persistent bubbles. Strawberry and cherry aromas and some biscuit/ bready complexity. Great length, purity and freshness.
“The 2009 Salmon Brut is pink with blue edges. This wine was made from 100% Pinot Noir grapes and was fermented in the bottle in which it is sold. Strawberry and cherry aromas and flavours are from the fruit. with the biscuit flavour due to time spent on dead yeast lees in the bottle.
