Babo wines are made by Australian Justin Bubb (an honorary Italian having spent the last six years making wine in Italy and who splits his time between Tuscany and Tasmania at Pooley Wines) with the idea of utilising the best fruit possible to produce wines of elegance and purity with a focus on vibrancy of fruit, texture and balanced complexity. All the wines are made at a small wine making facility in Empoli. All of these wines are very well made while still speaking clearly of their origins. They offer exceptional value, and are bottled under screwcap. The BABO philosophy is simple. Source the finest regional fruit from Italy, to produce wines of elegance and purity with a focus on vibrancy, texture and balanced complexity.
About this wine: Babo’s mouthwatering 2023 Soave is predominantly Garganega, with a small parcel of Trebbiano di Soave. Both varieties are sourced from vineyards in Bardolino and Valpolicella with volcanic soils and elevations ranging from 40 to 120 metres. After a gentle press and short maceration on skins to bring more texture and complexity, the juice fermented in stainless steel tanks, followed by six months’ maturation on light lees.
Soave’s long road to redemption is well underway, and now Babo has joined the fray. It’s another delicately delicious white: juicy and vibrant, full of citrus and flowers with touches of salt and wax and a lovely bright finish. Like all Babo’s wines, it’s versatile and perfect for a crowd. It drinks well as an aperitif, but shellfish pasta or roasted asparagus (with plenty of Parmesan) would be our go-to.
92 points, Tom Kline, Wine Pilot “Made from 85% Garganega with the balance Trebbiano di Soave, this opens with a soft, suave perfume of honey, peach iced tea and rose water, before moving into notes of green pear, green apple and mandarin pulp, underpinned by subtle bitter nuances of lemon rind and green almond. The palate has lovely flow and textural softness, carrying flavours of white peach, pear, green apple, almond, lemon peel, lemon oil and wet stone. It glides effortlessly through the mouth before green almond bitterness and cleansing acidity bring shape and freshness to the finish. A lovely wine that shows varietal truth, balance and drinkability at a very friendly price point. Nicely done.”
