Rigorous fruit selection predominantly ‘Gin Gin’ clone of chardonnay renowned for low yields, gorgeous natural acid and extraordinary concentration of fruit. Wild yeasts, barrel fermented and matured for 9 months in 45% new top shelf tightly grained French oak (Seguin Moreau). A beautiful long line of flavour – citrus, pear and gunflint characters meld with seamless spicy French oak and underlying lemon sorbet tones with a wonderful flinty finish.
