Nest Egg is the name given to an elite group of Bird in Hand wines selected from exceptional parcels of fruit. Tiny parcel of 100% handpicked pinot noir from the exceptionally low yielding 2007 vintage Warm autumn days and cool nights developed flavour and ripeness along with crisp acidity and aromatics. 1 hr on skins gives the wine a delicate rose colour. Method champenoise and extended lees maturation imparts freshly baked bread and roasted chestnut characters.
