Description
Founded in 1846 Champagne Devaux is the leading producer from the exciting Côte Des Bar region in Champagnes south. The House is owned by leading growers of the Region after the last member of the Devaux family handed control to the group in 1987 with assurances that the growers would strive for the highest standards and continue the legacy of the House.
Pinot Noir is King in the Côte Des Bar in the Aube (Kimmeridgian limestone-clay soils) as it is warmer and achieves more consistent ripeness hence this variety is prominent in many of the Cuvées and what Devaux refer to as the backbone of the House. They are also a grower for Krug
The D collection is the principle range and showcases the dedication of the House to long ageing before release with a minimum of 5 years for the NV range and 10 years for the Vintage Cuvée. Chef de Cave Michel Parisot has overseen 25 vintages and has an intimate understanding of the region which has seen Champagne Devaux featured on some of the finest wine lists in the World.
Comprises rigorous selection of sustainably grown vineyards across 50 hectares including the finest Pinot noir (55% from Cote Des Bar) and Chardonnay (45% from Côte des Blancs, Montgueux and Côte des Bar), first pressing only. Base wines predominantly fermented in stainless steel with 10% fermented in small oak, partial malolactic fermentation, on lees minimum of 5 years (legal minimum is 15 months so this extended lees aging provides finesse with a finer, more persistent bead and green cashew nut autolysis characters), 35% reserve wines aged in large oak casks including some from perpetual Chardonnay solera and Cuvee D solera going back to the 90’s. Brut style : Dosage/ Liqueur D’Expedition 8g/l.
