Description
Bindi’, 50 kilometres north-west of Melbourne in the Macedon Ranges, is the family property of the Dhillon family. Originally purchased in the 1950s as part of the larger grazing farm ‘Bundaleer’, ‘Bindi’ is a 170 hectare farm of which 7 hectares are planted to Chardonnay and Pinot Noir. Fifteen hectares are dedicated to managed plantation eucalypts for high grade furniture timber whilst the remainder of the land is maintained as remnant bush land and important indigenous grasslands.
The Bindi vineyard is the fundamental focus of our endeavors. Our vineyard and winemaking philosophy is to seek balance and purity in the expression of our various individual vineyard sites and this philosophy is applied to farming and conservation at ‘Bindi’; the preservation of the natural harmony.

About this wine from the winemaker: “This wine, to state the obvious, has been quite a while coming! In 2014 we began making experimental ferments using four clones from this exciting vineyard and decided to mature the blended bottled wines until we felt they were settled and singing. The 2016 Col Mountain is based on the smooth and aromatic Shiraz clones PT23 and 1654 with a little of the robust and rich Yalumba and R6WV28. The Col Mountain wines, from deep red soil with a significant amount of shattered rock, are earthier and more structured than our traditional more northern source of Shiraz, Colbinabbin Estate, which has previously made up all, and now roughly 60%, of the Pyrette label. This flamboyant wine is deep and rich, spicy and earthy with black cherry and blackberry aromas. It is mouth filling and builds power through the mid and back palate. It is not heavy, but rather bright and vigorous, chewy and long. It is beginning to drink very well now and will cellar positively for another decade at least.”

Complex aromas and flavours of Chinese five-spice, menthol, pink peppercorns with some savoury meaty reduction, alongside a core of dark fruit. Full bodied, rich yet well balanced, with persuasive tannins tending to a slight green-walnut bitterness on the finish. Spot on now, but more time ahead of it.”
