Made by award winning organic winery Greystone in North Cantebury in New Zealand’s South Island. Winemaker Dominic Maxwell and viticulturist, Nick Gill are rising stars of the industry and this stunning Waipara Valley estate on the Omihi slopes with its clay-limestone soils and free draining gravels is perfect for grape growing. About this wine from the winery “Our Sauvignon Blanc blocks grow at the base of the Omihi hills, facing north-west into the North Canterbury sunshine. These are predominantly the rare Loire clones 376 and 530 but also with some Bordeaux MS clone in small amounts. The soils are mainly wind blown loess over clay. The block surrounded by the Omihi creek has been flooded regularly in the past so has some rich silt deposits on the top with freer draining gravels underneath. The dry North Canterbury summers, bony soils, and the low yielding clones all combine to give very concentrated flavours to our grapes.
“Once picked and in the winery we then gently crush the fruit and settle it to remove the heavy solids – this means we get very clean fruit flavours in the wine. After crush we run the juice to old French barriques for fermentation. This wild and barrel ferment means a lot more work for our winemaking team, howevertThe small barrels allow the acidity to soften and exposes the wine to greater yeast lees- giving us more creaminess on the palate. The wild natural ferment (we dont add commercial yeasts or in fact anything during ferment ) is slower and allows greater complexity of flavour – and creamy malolactic ferment adds more texture on the finish. Something a little different but we think the quality of this fruit deserves the extra love in the winery.”

It’s rich, quite slippery in texture, but has a juicy cut of acidity, some jalapeño spiciness, a little chalkiness, and a rich lychee and spice finish of good length. Quite intense, with a lot of flavour, and quite different to your run-of-the-mill NZ Sauvignon.”
