Description
A native of Beine in the Chablis region, Christophe Patrice began working in the family business with his father and uncles in 1996. In 2006 he started his own venture with five hectares of vines. In 2011 he acquired the Daniel Roblot estate increasing his holdings to 22 hectares with an average vine age of 50-70 years. Today the domain has parcels in the communes of Beine, Courgis and Chablis and produces Petit Chablis, Chablis and Chablis Premier Cru Beauregard.
The vineyards are planted at a low density of 5 800 vines per hectare and managed following a lutte raisonnée (sustainable) regimen. For Christophe, Chardonnay expresses itself in Chablis like nowhere else, so he insists on vinifying his wines entirely in stainless steel tanks to preserve their typicity and freshness.
100 % Chardonnay purchased from growers just outside the Chablis AC boundary and labled “Vin de France”. The fruit is whole-bunch pressed to stainless steel tanks for a cool fermentation with indigenous yeast. The lees from his Chablis’ are added to this cuvee to give more complexity and body, the result being generous and immediately attractive. Once fermentation is complete the wine is racked off lees and matured in tank for 4 months, without malolactic conversion. Reminds me of a Petit Chablis – quality and value on offer here!
