The Timo Mayer winery surely sits on top of the most beautiful viewpoint in the entire Yarra Valley, between Healesville and Woori Yallock. German born into a wine making family in Wuerttemberg, wine is in Timo’s blood, but he made his own way here in the Yarra valley. Working with many Iconic wineries in the past, Timo’s style of wine has been recognised as one the most interesting to emerge in Australia for the last decade or more. His use of whole bunch fermentation is legendary! While his reputation continues to grow, his vineyard sites do not, so year after year we are faced with the difficulty of providing wine to an ever growing audience as his wines are also in high demand in the US as well as Europe and Japan.
Timo received the fruit for this wine from from near Gembrook in the Upper Yarra Valley rich in red basalt Volcanic soils. The wine has stone /mineral and smoke on the nose before the dark fruit takes over. Bright red plums and blackberry fruit on the palate with ripe spice notes .Great concentration of fruit with gentle chewy tannins .Finishes long and smooth with a hint of Blood orange peel and a very fine smoke note.

The shiraz comes off the 20yo Pancake Creek vineyard in Gembrook; 100% destemmed and matured in older French 300L hogsheads. This is the first time a wine has been commercially made and released from this vineyard, and what a beauty it is. Brightly coloured, aromas of red and black fruits are complemented by pink peppercorns and Indian spices. Delicious on release – I like how the wine’s structure relies as much on its crunchy acidity as it does on the silky tannins. To drink and enjoy now and over the next 6–8 years.
