Babo wines are made by Australian Justin Bubb (an honorary Italian having spent the last six years making wine in Italy and who splits his time between Tuscany and Tasmania at Pooley Wines) with the idea of utilising the best fruit possible to produce wines of elegance and purity with a focus on vibrancy of fruit, texture and balanced complexity. All the wines are made at a small wine making facility in Empoli.
All of these wines are very well made while still speaking clearly of their origins. They offer exceptional value, and are bottled under screwcap. The BABO philosophy is simple. Source the finest regional fruit from Italy, to produce wines of elegance and purity with a focus on vibrancy, texture and balanced complexity.
100% Nero d’Avola from 24-year-old vines near Menfi on the Sicilian coast (in the province of Agrigento). The leaner soils and cooling coastal influence here tend to produce a more delicate style of Nero d’Avola, factors that first attracted Justin Bubb to the region, “most of the time I find Nero d’Avola in Sicilia made in this really ripe, high octane style and the wines lacked freshness and punch“.
Picked around 12 Baumé, the fruit was de-stemmed (no crushing) with lots of whole berries remaining in the ferment. With only a gentle extraction, the wine was pressed off skins after 10 days to mature in large-format oak (2,000-litre), where it stayed for only 10 months before bottling.
Everything about the processing points to a winemaker looking for freshness and finesse, and that’s just what you get here. Expect a lifted perfume of freshly crushed blueberries and plum with flecks of aniseed and dried mountain herbs. The palate is loaded with the same fruit, yet it’s fresh and lively with a cool, powdery close. Yet another brilliant value from Justin Bubb.
