According to Stephen George With a climate similar to parts of Burgundy it was no surprise that Chardonnay was first planted during the Adelaide Hills ™ wine revival in the early 1980 ™s Our own chardonnay vines are more than 25 years old and our winemaking aim is for a complex style of chardonnay with clean and healthy new world fruit complemented by old world wine making techniques .was made from dry grown. low yielding grapes with fermentation in new and seasoned French oak using natural and cultured yeasts. This was followed by the avoidance of malolactic fermentation. stirring of and maturation on yeast lees.
