The popularity of Sam Scott’s La Prova label is the result of a combination of innovation, awareness, site-selection, authenticity and value. These are Sam’s site and varietal trials, where he applies some modern and original methodology to what he’s learnt of how these Italian varieties are made at their origins.
He chooses the varieties based on an almost intimate knowledge of vines and vineyards along the length of the Adelaide Hills, and Sam maintains an input into the chosen vineyard’s management. The wine style needs to be terroir-driven, varietal and authentic, and must also carry the Scott signatures of drive, vitality and freshness.
From the winemaker, Sam Scott about this wine“Dry, textural, savoury. We love that rosato makes us dream of all the different yummy foods you want to nibble on with a glass in hand. Tannic red Italian varieties like Aglianico are perfect for the style. They develop bright, vibrant, fragrant red fruits early on; and the savoury notes of a touch of tannin on the finish tidy the palate up. Cooler climate due to elevation. Aglianico is native to the hills of Naples and well-matched to the climate in the hills of Kersbrook, a warmer sub region of the Adelaide Hills. Grown specifically for Rosato and picked early in the red-fruit-flavour spectrum. Fermented in stainless steel with fluffy lees to create a vibrant, lifted rose with a savoury finish. Vegan friendly.
