Leading Geelong producer By Farr makes a delicious Pinot Rose and this new release is no exception!
“Saignee, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation. The wine is then placed in four- and five-year-old barrels for 10 months before being filtered and bottled.” Winemaker Nick Farr.
Nick likes to produce a very dry style of rosé with flavour and varietal sweetness. It has a salmon-pink hue, is perfumed with fruit and a lovely savoury, earthy palate with a long, dry structured finish but with beautiful zing. Perfect wine with food. Up there with my favourite Rose in the land… Do yourself a favour.. Very limited this year.. yields down 70%

Salmon-pink; has the mouthfeel of pinot noir table wine – it’s more than a rose. Rose petal, cherry blossom and spice aromas lead into a supple, long palate raising the bar on its complex web of spices. The magic lies in the retention of pinot varietal fruit. One of the best roses going around, year in, year out.“
